How to Hard Boil Eggs

Perfect hard boiled eggs in under 15 minutes using the stovetop method.

  1. Place eggs in a single layer in a saucepan and cover with cold water by 1 inch

    Start with cold water to prevent cracking. Use older eggs (7-10 days) for easier peeling.

  2. Bring the water to a full rolling boil over high heat

    Don't cover the pot — watching it lets you catch the exact moment it boils.

  3. Remove the pan from heat, cover with a lid, and let sit for 10-12 minutes

    10 minutes for a slightly soft center, 12 minutes for fully firm yolks.

  4. Transfer eggs immediately to an ice bath for at least 5 minutes

    This stops the cooking and prevents the grey-green ring around the yolk.

  5. Tap eggs on a hard surface, roll gently, and peel under cool running water

    Starting from the wide end (where the air pocket is) makes peeling easier.
